How are older walk-up type apartment buildings with limited storage space going to store the huge amounts of food waste generated by their tenants? And what about the stink? Same with those brown compost buckets in homeowner neighborhoods. I’m all for paper – glass – metals recycling but this is intrusive and will stink up our neighborhoods. This nonsense isn’t mandatory anyway.

Separating organics for composting is not for every apartment dweller. For many people who have room to store kitchen waste and transport it to a community garden or have it picked up by the DSNY curbside p/up program, it can be easy. If it is do-able, then composting is a great way to limit the production of methane, a powerful greenhouse gas.
